Onion marmalade
What the heck is onion marmalade? Onion marmalade is a delicious reduction of onions, balsamic vinegar, thyme and sugar. It is sweet and tangy and can be eaten hot or cold and it's super easy to make...and a great way to use up onions from the garden. The marmalade will last about 3 days in the fridge or a suggested time of 3 months in the freezer (I think it could last longer if it's stored properly). Ingredients -1 Tbsp olive oil -4 cups of sliced onions -1/4 cup of water -2 Tbsp balsamic vinegar -1 Tbsp brown sugar -1 Tbsp fresh thyme or 1 tsp dried thyme -salt & pepper Directions In a heated frying pan add your olive oil and your onions. You will need to cook your onions until they become transparent, usually 10-15 mins. Once your onions are at this stage, add your water and give it a good stir. Lower your heat to just below medium.
