Parsley, walnut pesto
When your garden is bursting at the seams with greens and herbs you know it's time to make some delicious pesto. Making pesto is a great way to preserve some of your beautiful herbs for later use. There are so many combinations that you can make, but today I choose what was ready to be picked and that was parsley.
A nice thing about pesto is that is also freezes really well. Blend your pesto and put it into ice cube trays and freeze. Once they are frozen transfer them to a ziploc bag...don't forget to label them with the date and what they are (I know you'll be experimenting with different kinds of pesto after tasting these yummy cubes).

There's a lot of flavour goodness packed in these cubes. Some of my favourite ways to enjoy pesto are on pasta, chicken, fresh baked bread and I even use it as a pizza sauce.
Parsley, walnut pesto
2 cups chopped fresh parsley
1 cup walnut
1/2 cup olive oil
1/2 cup parmesan cheese
3 cloves of garlic
1/2 tsp of salt
Eat what you grow :)
