Onion marmalade


What the heck is onion marmalade?  Onion marmalade is a delicious reduction of onions, balsamic vinegar, thyme and sugar.  It is sweet and tangy and can be eaten hot or cold and it's super easy to make...and a great way to use up onions from the garden. The marmalade will last about 3 days in the fridge or a suggested time of 3 months in the freezer (I think it could last longer if it's stored properly). 











Ingredients

-1 Tbsp olive oil
-4 cups of sliced onions
-1/4 cup of water
-2 Tbsp balsamic vinegar
-1 Tbsp brown sugar
-1 Tbsp fresh thyme or 1 tsp dried thyme
-salt & pepper

Directions

In a heated frying pan add your olive oil and your onions.  You will need to cook your onions until they become transparent, usually 10-15 mins.  Once your onions are at this stage,  add your water and give it a good stir. Lower your heat to just below medium.  Cover with a lid and stir every 10 minutes until they become a golden brown colour (40 mins).  If you need to add more water, please do so until you get your onions the right colour.  When your onions are done, add the balsamic vinegar, sugar, thyme, salt and pepper.  Cook until most of the moisture is gone.

Now what do I do with this?  There are so many possibilities that my mouth is watering.  Our family really enjoys these onions on homemade pizza, or stuffing it into a chicken breast. or even eating it cold on a cracker.
